As foodies become more and more accustomed to what Ramen actually is, we thought that it was the perfect time to bring a new type of ramen that was only available to the Japanese until now. Iekei (translated as “house-style”) (pronounced as E-A-K) It’s been around for more than 40 years in Japan and has some very loyal, almost fanatical followers. Having straight thick noodles is visually the easiest characteristic to spot that makes it different from other types of ramen. The noodle is thick so that it tangles well with the soup with every bite.
More non-visual, but bigger difference is the broth. It is a mix of the Kyushu Tonkotsu and the Tokyo Shoyu broth. It merged the flavorful two styles from West (Kyushu) to East (Tokyo) and built a completely new category, IEKEI.
